- 6 tablespoons unsalted butter, melted (and don’t skimp on extra for the waffle iron!!!)
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 teaspoon fine sea salt
- ½ teaspoon baking soda
- 1 cup buttermilk
- 1 whole milk
- 4 large eggs
Step 1: Melt Your Butter
Whether you prefer the stovetop for that old-fashioned touch or the microwave for convenience, melt your butter and set it aside to cool slightly.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and baking soda. It’s simple, classic, and the foundation of the fluffiest waffles.
Step 3: Whisk the Wet Ingredients
In a separate bowl, combine the buttermilk, melted butter, and eggs. Whisk until smooth and just a bit creamy—it should feel like a nod to tradition with a hint of elegance.
Step 4: Bring It All Together
Gently fold the wet ingredients into the dry mixture. Be careful not to overmix—waffle batter should be lumpy, like life’s little imperfections that make it all interesting.
Step 5: Preheat and Butter Up
Heat your waffle iron and, using a pastry brush (or a paper towel, if we’re being practical), coat it lightly with butter. Butter not only prevents sticking but also gives you that irresistible golden crisp.
Step 6: Cook to Perfection
Pour about ½ cup of batter onto the waffle iron (adjust for your iron’s size) and cook until golden brown and perfectly crisp. Repeat, adding butter between batches because life is too short for mediocre waffles.
Step 7: Serve Like You Mean It
Serve waffles immediately as they’re ready, or keep them warm in a 200°F oven. For me, it’s all about the toppings: the best maple syrup (none of that fake stuff), a pat of butter, a dollop of whipped cream, and fresh berries—served on the side, naturally.

If you don’t have buttermilk on hand, you can make a substitute by combining 2 cups of milk with 2 tablespoons of lemon juice or white vinegar. Let it sit for 5–10 minutes to curdle slightly. But honestly, there’s nothing quite like the real thing.
Because when it comes to waffles, why settle for less than the very best?
